Rhubarb Crisp

 

Rhubarb Crisp

Ingredients

  • 3 c. diced rhubarb
  • 2 eggs
  • 2 T. flour
  • 1 1/2 c. sugar
  • 1 tsp. cinnamon

Topping:

  • 1/2 c. butter
  • 1 c. flour
  • 1/2 c. brown sugar

Instructions

  • Put the rhubarb in a 9” x 9” baking dish.  Mix together the eggs, 2 T. flour and 1 1/2 c. sugar.  Pour this mixture over the rhubarb.  Sprinkle with the cinnamon.
  • Make the topping by cutting the butter into the flour and brown sugar.  Spread over the rhubarb
  • Bake at 350 degrees for 50 - 60 minutes.  Serve plain or with ice cream.
