Rhubarb Crisp
Ingredients
- 3 c. diced rhubarb
- 2 eggs
- 2 T. flour
- 1 1/2 c. sugar
- 1 tsp. cinnamon
Topping:
- 1/2 c. butter
- 1 c. flour
- 1/2 c. brown sugar
Instructions
- Put the rhubarb in a 9” x 9” baking dish. Mix together the eggs, 2 T. flour and 1 1/2 c. sugar. Pour this mixture over the rhubarb. Sprinkle with the cinnamon.
- Make the topping by cutting the butter into the flour and brown sugar. Spread over the rhubarb
- Bake at 350 degrees for 50 - 60 minutes. Serve plain or with ice cream.
