Oatmeal Flax Chocolate Chip Cookies
1 1/2 c. flour
1 c. quick cooking oats
1/4 c. ground flax seed
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
12 T. unsalted butter, softened
1 c. sugar
3/4 c. packed brown sugar
2 large eggs
1 tsp. vanilla extract
1 c. semisweet chocolate chips
Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper.
Whisk the flour, oats, flax seed, baking soda, salt and cinnamon in a bowl.
Beat the butter, sugar and brown sugar in a large bowl with a mixer until fluffy. Beat in the eggs, one at a time, beating well after each addition. Beat in the vanilla. Reduce the mixer speed to low, add the flour mixture and beat only until combined. Stir in the chocolate chips.
Drop heaping tablespoonfuls of dough onto the prepared baking sheets, about 2 inches apart. Bake until golden brown, 10 to 12 minutes. Let the cookies cool for 3 minutes on the baking sheets then transfer to wire racks to cool completely.
