Napa Cabbage Salad
Ingredients
1/2 c. sliced almonds
3 T. canola oil
2 T. rice vinegar
1 T. soy sauce
1/2 tsp. sugar
1/2 tsp. freshly ground pepper
1 pound Napa cabbage chopped
1 diced shallot
1/4 c. chopped cilantro
Instructions
Preheat the oven to 300 degrees. Put the almonds in a pie plate. Bake for just a few minutes until lightly toasted. Let cool.
In a large bowl, whisk the oil, vinegar, soy sauce, sugar and ground pepper.
Add the cabbage, shallot and cilantro and toss. Add the almonds and toss again right before serving.
